Fairtrade organic desiccated coconut offers the shredded and dried essence of coconut, infusing any recipe with a tropical flair. Fairtrade organic desiccated coconut, inherently gluten-free and abundant in beneficial fats like medium-chain fatty acids, can elevate metabolism and support weight loss endeavours. Additionally, it stands as a potent source of essential vitamins and minerals, such as iron, potassium, and zinc, solidifying its status as a true superfood brimming with numerous health advantages. Derived from the disintegration and dehydration of coconut kernels or pulp, it primarily consists of the white portion of the kernel, devoid of the brown testa or parings.

Manufacturing of Desiccated coconut

The production process of fairtrade organic desiccated coconut begins with carefully chosen farm-fresh, mature, and firm coconuts, precisely selected and introduced into wet coconut disintegrators. Initially, the coconut undergoes deshelling and paring, where the brown testa is removed. Following this, the white coconut kernel undergoes an initial sterilization process by washing it in boiling water. Subsequently, the white coconut kernel is disintegrated or shredded.

The shredded white wet coconut kernel is then dried at temperatures ranging from 60 to 75 °C in a hot air fluid bed drier until it reaches a moisture level of less than 2.5%. The final product is characterized by its pure white colour, crisp texture, and fresh taste.

In terms of composition, fairtrade organic desiccated coconut typically contains 68–72% oil and has a nitrogen content of around 1.05%. The primary protein present is globulin, while the predominant sugar is sucrose, comprising 6–7% of the product. Additionally, the crude fibre content amounts to approximately 4%.
